Honey Roasted Winter Vegetables

Serves 4

Ingredients

  • 250g Parsnips
  • 250g Carrots
  • 100g Red Onion
  • 65ml Vegetable Oil
  • 50ml Maple Syrup/60ml Honey

How to make

  1. Preheat oven to 200c/400f/Gas Mark 6
  2. Peel carrots and parsnips and halve them crosswise, then halve or quarter each piece lengthwise.
  3. Peel and slice the onion.
  4. Place vegetables into a roasting tin, adding the oil, and mixing well to make sure they’re evenly coated.
  5. Pour over the maple syrup or honey, and add the tin to the oven.
  6. Roast for approximately 35 minutes, turning occasionally, or until the parsnips are tender and a lovely golden-brown colour.
